The Cold Chain Challenge in Indonesian Seafood

Harvest to Processing Facility
The first link in the cold chain is the most vulnerable. Indonesian fishing vessels use one of three preservation methods:
1. Ice slurry (chilled seawater)
Used for fresh-chilled shipments. Target temperature: 0-2°C. Shelf life from harvest: 7-10 days maximum. Suitable for air freight to nearby markets (Singapore, Hong Kong, Taiwan).
2. Blast freezing on vessel
Some larger vessels carry onboard blast freezers (-40°C plate freezers). Product is frozen immediately after catch, achieving IQF quality without shore-based processing delays.
3. Live transport
For high-value species (grouper, coral trout), live fish are transported in oxygenated seawater tanks. Requires specialized live fish vessels with continuous oxygenation, pH monitoring, and density control.
