Gayo Arabica from Aceh Tengah district (altitude 1,200–1,700m) is Indonesia's most internationally recognized specialty coffee. The wet-hulling (Giling Basah) process unique to Sumatran coffee produces the full-bodied, earthy, complex cup profile — with notes of dark chocolate, cedar, and tropical fruit — that drives demand from Japanese third-wave roasters and American specialty café chains. Certified organic Gayo lots are available from cooperative farms that have maintained organic certification for 5+ years.

Toraja Arabica from South Sulawesi (altitude 1,400–1,800m) produces a contrasting cup profile: bright acidity, medium body, and distinctive spice-and-fruit notes (clove, vanilla, red berry) that appeal to European specialty buyers seeking alternatives to traditional African origin profiles.
