The fillet format opens the Red Grouper market to buyers in luxury hotel kitchens, fine-dining restaurants, and premium retail segments in Europe, North America, and Japan — markets where the convenience of a ready-to-cook, bone-free portion commands a significant premium over whole fish.
The production process is tightly controlled to preserve the exceptional quality of the raw material: live and fresh Red Grouper from our Riau Islands supply network is hand-filleted by experienced processors within 2–4 hours of arrival at our facility, ensuring the flesh retains its characteristic firm texture and snow-white color. Fillets are pin-boned, inspected through a metal detector, and individually frozen in our IQF tunnel at -35°C — achieving -18°C core temperature in under 30 minutes — before being packed in 5kg or 10kg master cartons.
Both skin-on and skinless options are available, with skin-on preferred by restaurant buyers who appreciate the presentation value and natural flavor contribution of the Red Grouper's distinctive skin during cooking. Skinless fillets are preferred for retail applications where consistent appearance and consumer convenience are priorities.
BRC Grade A certification makes Red Grouper Fillet from TaMainco directly eligible for UK supermarket supply (Waitrose, M&S tier suppliers) and European specialty retail. Combined with Halal MUI certification, the product has simultaneous eligibility for European halal retail channels — a growing market segment in the UK, France, and the Netherlands.
