The species thrives in the coral reef environments of the Indonesian archipelago, where water temperatures and salinity levels produce fish with exceptionally firm, white flesh and a naturally sweet, clean flavor. Unlike farmed alternatives from other origins, Indonesian wild-caught Red Grouper retains the prized red dorsal coloration and lively behavior that East Asian live-fish market buyers demand.
TaMainco sources directly from licensed fishing cooperatives in the Riau Islands and South Sulawesi, with onboard oxygenated holding tanks that maintain live fish condition during transit to our Surabaya processing facility. Each batch undergoes HACCP-documented temperature monitoring from vessel to cold storage, ensuring traceability and consistent quality for international buyers.
For IQF frozen product, individual fish are blast-frozen at -35°C within 4 hours of harvest, achieving a core temperature of -18°C in under 30 minutes. The result is a product indistinguishable from fresh-chilled in sensory evaluation — texture, color, and flavor are fully retained through the IQF process.
