Indonesian Flower Grouper is sourced primarily from the coral reef systems of Sulawesi and the Maluku archipelago, where the species reaches optimal market weight of 500g–2kg in natural reef environments. The relatively deep reef habitats in these waters produce fish with firmer texture and superior flavor compared to specimens from shallower, warmer areas.
